Before moving to Paris, I didn’t have much of a sweet tooth. I much rather have preferred an entrée to dessert, a cracker to a cake. But there is something in the air here. Last Sunday, as I was walking to work at the brink of dawn, the households of Paris were still fast asleep. But one thing was lurking through the air. That was the scent of the boulangeries, the ovens turned up and pumping out the daily baguettes, traditions and cakes. The scent was intoxicating; luring me in and up to the window front to peer into the shop. Canneles bordelaise, moulleux au chocolat, macarons, fraisers, Paris brest, éclairs. The scent alone makes you mouth water and the sight of the cakes makes your stomach grumble for the sweetness. (It’s a good thing I live on the sixth floor with no lift!)
My favourite cake that I’ve discovered since moving here is the Fondant au chocolat. It’s dense chocolatey gooey goodness melts my heart every time! And it is so easy to make (a 10 year old taught me!). I just put one in the oven and thought I’d share the recipe:
Simple Chocolate Fondant Cake (as per Bérénice)
Ingredients
200 g dark chocolate
150 g sugar
50 g flour
150 g salted butter
4 eggs
Pinch of salt
Directions
Preheat oven to 180⁰C. Grease a cake pan. Melt the chocolate.
Break the eggs, separating the yolks from the egg whites. Beat the whites with a pinch of salt.
Mix the butter and sugar; add the melted chocolate, mix well. Incorporate the yolks, one by one, mixing until smooth.
Pour mixture into cake pan; lower heat to 150⁰C and bake the cake for 30-40 minutes.
Devour!
You cannot go wrong with this cake! It is absolutely delicious! Please, make it, eat it and be merry!
